Coconut Jelly
Ingredients (serves 2)
2 young coconuts
1 tsp agar-agar powder (Konnyaku/ Gelatine are fine too)
3 tbsp coconut milk/cream
1 tbsp sugar (optional)
Directions
Open the lid and remove juice from coconut
Still juice to settle dregs.
Pour clear juice into sauce pan, add agar-agar powder and sugar. Mix well
Bring to a boil and lower the heat. Remove the foam.
Pour mixture back to coconut shell till 2/3 full. Chill to set jelly partially.
Bring rest of mixture to stove, keep on low heat. Add in coconut milk/cream
When jelly in coconut shell is set on the surface, pour coconut milk mixture on top.
Chill to set and serve cold.
